4 ingredients and 90 seconds in the microwave
I’m constantly on the hunt for healthy alternatives to satisfy my usually unhealthy cravings. I recently saw Phil Mackenzie, founder of LEANSQUAD, post on Instagram something called a ‘mug cake’. With four ingredients and 90 seconds in the microwave, he whipped up this delicious looking cake that I had to try.
Sure enough, 4 ingredients, and 90 seconds later, I was enjoying a delicious chocolate cake made 100% in my microwave. I was hooked.
As an athlete who is constantly searching for healthy treats, this has become one of my go-to’s. I took Phil’s recipe and paired it down a bit fit my needs and taste preference, but nonetheless, this recipe remains incredibly simple and even more delicious. Here’s how to make it…
Vanilla mug cake I made using this recipe! Quick, easy, and delicious!
1 medium-sized banana
1 tablespoon of almond flour OR a small handful of almonds (optional)
1 scoop of chocolate/vanilla protein powder
Peel the banana and place it in a medium-sized microwaveable bowl. Mash with a fork until thick with no chunks.
Add the egg, almond flour, and protein powder to the bowl. Mix well using a fork or whisk. (Alternatively, if you don’t have almond flour, you can blend or crush almonds as best you can to mirror almond flour.)
Microwave for 90 seconds. Depending on your microwave/power, you may need to cook an additional 30 seconds.
Serve with your favorite fruit on top! I prefer a handful of blueberries and some almonds!
**Alternatively, you can put all ingredients in a magic bullet or blender and blend them all together. I use the Magic Bullet and it works wonders!**
I really love this recipe. It’s super quick, easy, and a great healthy alternative to the traditionally not-so-healthy cake options. With 4 ingredients, it takes less than 5 minutes to make and leaves me feeling full and satisfied!
